Easy vegan carrot salmon lox, the long lost breakfast option for people that want to add more veggies to their routine but struggle with the idea of eating oatmeal every day or chugging a vegetable-filled smoothie each morning.

Vegan carrot salmon lox is the perfect vegan salmon substitute! It truly tastes like real salmon lox and is so easy to make. Creamy, light, and satisfying, vegan cream cheese with smoked carrot salmon lox is the imitation salmon you've been waiting for. It is crazy how much it reminds me of the real deal despite the recipe being so low effort!

Being mindful of the people that are still not onboard with tofu quite yet, this savory vegan breakfast option is incredible for people that want something with no tofu!

IMPORTANT: This recipe is ‘quick’ in the sense that it doesn’t take multiple days to marinate.
It is also quick in the sense that you will cook a large bunch of vegan smoked carrot salmon lox in one go and then they will be ready to go for the rest of the week! Kind of like vegan breakfast meal prep!

What is the Vegan Salmon Substitute made out of?

If you guessed carrots, you are correct!
I know, it sounds ridiculous. I was very resistant to trying this recipe even though salmon lox on toasted bagels with cream cheese was one of my favorite things before going plantbased. I thought it was insulting to think you could create imitation salmon using a carrot.

Alas, my curiosity got the better of me and I am so thankful it did! It truly does remind me of the real thing to a surprising degree!

I think this meal is incredible for people that are new to the plant-based diet or new to the vegan diet. This vegan salmon substitute satisfies your savory seafood cravings while still feeling light and healthy.

Easy Vegan Carrot Salmon Lox Recipe

Ingredients:

  • 1-2 Jumbo Carrots

  • 2-3 tbsp Rice Vinegar

  • 2-3 dashes of Liquid Smoke

  • 1-2 tbsp Kelp Granules

  • 1-2 tbsp Caper Brine (optional)

  • 1 tbsp Garlic Granules

  • Capers themselves (not optional)

  • Salt & Pepper

  • Fresh Dill

  • Red Onion

  • Vegan cream cheese of your choice

  • Bread of your choice, I like using whole wheat English muffins.

Instructions for quick & Easy Vegan Carrot Salmon Lox:

  1. Buy one or 2 jumbo carrots.

  2. Use a peeler to thinly peel carrot strips.

  3. In a bowl, toss the carrot peels with rice vinegar (2-3 tbsp), liquid smoke (2-3 dashes), kelp granules, garlic granules, caper liquid (1 tbsp), salt, and pepper (white pepper works well). As long as it smells fragrant and a faint bit like seafood, you are good to go!

  4. Let the flavors mingle for about 1 hour in the fridge.

  5. Preheat your oven at about 350 F.

  6. Wrap your seasoned carrots in tin foil pockets.

  7. Cook in the oven for about 3 hours, flipping the tin foil packets every 45 minutes.

  8. Within 3 hours on low, your carrots should be good to go. Feel free to adjust the flavoring and cook on low a little longer.

  9. Let them cool to room temperature before putting in a container in the fridge.

  10. Have vegan cream cheese, thinly sliced red onions, fresh chopped dill, and capers ready to go!

  11. To assemble, toast your bread, apply cream cheese, add on the vegan carrot salmon lox, add red onion slices and garnish with capers and fresh dill.

  12. Enjoy!
