Halifax Donair with Mushroom Meat and Condensed Coconut Milk!
A consistent go-to for a quick easy dinner or lunch is a vegan donair wrap with meaty mushrooms! I love frying up some spiced oyster mushrooms, throwing them on a pita, and drizzling vegan Halifax donair sauce all over it. The sweetened condensed coconut milk works perfectly! This is a whole-foods-based vegetarian recipe that is as mouth-watering as it gets.
Vegan Donair Meat - spiced Oyster Mushrooms
The key to making mouth-watering vegetarian mushroom shawarma pitas is a good donair spice blend. If you do not have a pre-made blend, no problem! I will show you what I use to spice my mushrooms.
Ingredients for homemade donair spice blend (equal parts for everything except the salt):
Cumin
Cinnamon
Black pepper
Garlic granules
Paprika
Oregano
A dash of salt
Optional - some dried parsley
YUM!! This blend is seriously delicious!
To cook donair spiced oyster mushroom Meat
I’d recommend buying 2 packages of oyster mushrooms in order to get 2 larger-sized servings of vegan donair meat. These mushrooms shrink and HEFTY amount, so this is why I recommend using 2 packages to serve 2 people.
Have your oven pre-heat to 200c (fan) / 375f convection or 400f bake.
Use a cast-iron on medium-high heat with oil or vegan butter.
Use a pot or secondary pan to slowly press the water out of the oyster mushrooms.
Keep cooking until virtually no more water is coming out and the mushrooms are getting nice and seared.
At this time, start adding donair spices to the mushrooms each time you flip them, feel free to add a bit more oil to avoid sticking.
Pop your donair mushrooms into the oven and bake to finish for 10-15 minutes.

How to Make Vegan Halifax Donair sauce with Condensed Coconut Milk
Sauce ingredients:
1 Can Sweetened Condensed Milk (300 ml)
⅓ Cup White Vinegar
1 ¼ teaspoon Garlic Powder
To make the sauce:
Whisk together all the ingredients in a medium-sized bowl.
I recommend using a whisk to combine everything very well.
Transfer to a covered container and chill until use!
Assembling your Vegan Halifax Donair with Mushroom Meat!
Now that you have your sauce and your vegan donair meat, it is time to assemble!
Ingredients:
Vegan Whole Wheat Pita Bread (or regular pita)
Sliced tomatoes
Sliced white onion
Vegan donair meat (from 2 packs of oyster mushrooms)
Vegan Halifax Donair sauce
Optional - Hot sauce and cracked black pepper
Assemble:
Simply layer your ingredients on your pita, wrap and enjoy!
The Halifax donair sauce is so good I’d recommend keeping some handy to dip into.
